Based out of Wollongong, distillers Tom, Dean & Jared will take us through their recently launched batch 2 whiskies, a sneak peak of a french oak work-in-progress cask plus be one of the first to sample TWL/WLA's latest exclusive bottling, a Headland's Bourbon Cask 58% that Oliver & Chris personally picked back in February on a distillery tour, fell in love with it immediately and had to grab it for our members.

ABOUT HEADLANDS DISTILLING COMPANY
Headlands Distilling Co. started from humble beginnings. Combining engineering precision and business acumen three high-school friends Dean Martelozzo, Jared Smith, and Thomas Simnadis set to work establishing Wollongong's first distillery.
As a company passionate about producing premium quality spirits, Headlands is exclusive in its selection of Australian grown grain. Partnerships have been forged with growers in the Riverina allow the grain to be traced back to the individual paddocks that they were grown.
Everything is done from scratch - fermentation, distillation and bottling are all done in-house. 2020 saw the release of our first Single Malt Whisky. Aged for a minimum of five years and finished in casks which were seasoned with Seppeltsfield Rare Rich Apera and Rare Muscat. 2021 will see the release of the world’s first Illawarra Plum cask whisky, aged in ex- Spirit of the Illawarra Plum barrels! Alongside some delicious whisky, they also produce locally made vodka, gin and innovative new liqueur-style products.
